Spinach Quiche:
I deep dish pie shell (I forgot, but you might need 2...)
2 pkgs. chopped leaf spinach (larger bag, in the frozen section)
1 large container cottage cheese
1/3 cup Parmesan cheese
2 eggs (beaten)
salt/pepper to taste
1/4 large yellow onion, chopped small
1/2 cup mozzarella cheese to top (if you do end up having 2 pies, just double the cheese for topping)
Preheat oven to 375 degrees.
Thaw the frozen spinach completely and squeeze/strain till all access liquid is out. Dump in a large mixing bowl along with the cheeses, onions, salt, pepper, and beaten eggs. Miz well and scoop into pie shell(s). Sprinkle mozzarella cheese over; bake for 45~ or so minutes, until crispy and light brown on top.

Sausage-Egg Quiche:
3/4 pound Italian sausage
1/2 cup onion, thinly sliced or diced
1/3 cup green pepper (optional)
1 1/2 cups sharp cheddar cheese, grated
1 tablespoon flour
1 deep-dish pie crust
2 eggs, beaten
1 cup evaporated milk
1 tbs parsley flakes
1/2 teaspoon seasoned or plain salt
1/2 teaspoon minced garlic
1/4 teaspoon pepper
Remove sausage from casing and brown in skillet. Drain sausage, reserving 2 tbs fat. Sauté onion and pepper in 2 tbs fat reserved from the sausage. Combine cheese and flour. Stir in sausage, pepper, and onion. Spread evenly in pie crust. Thoroughly combine remaining ingredients and pour into pie shell over sausage mixture.
Place on a cookie sheet and bake in a preheated oven at 375°F for 35-40 minutes, until brown and set.

Ah, I love quiches. :)
Me tooooo! :) Too bad my dad is not a fan of then, though, otherwise I'd fix them more often. ;)
