Recipe for Cinnamon Muffins

Pre-heat oven to 400 degrees. Mix all muffin ingreadiants starting with the dry ones and then adding the moist ones.

Muffin mix:
1 egg
3/4 c. milk
1/3 c. oil
1 3/4 c. flour
1/4 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt

Stessel Topping:
1/2 c. nuts (opptional)
1/2 c. brown sugar (packed)
1 1/2 tsp. cinnamon
2 tbs. melted butter

Once you have the muffin mix all mixed put it aside and mix the topping. Then spray 12 muffin cups and make then 1/3 full with muffin mix. Add about 1 or 2 tsp. to each of the topping mix and then finnish using the muffin mix over them again. Top with the remaining strussel mix and bake in pre-heated oven for 25 minutes.

I just made these for lunch and they were a big hit! I used 1 cup AP flour and 3/4 cup whole wheat flour, and it was still really good! Thanks for the recipe.

Oh good! Our family loves everything with cinnamon, too. So they were a hit for us as well. :)
And, yeah, variations/exchanges are always a fun and healthy way to go!

I am wondering how you got yours to stay moist. Mine was no where near as "wet" as your batter looks. I made it a second time not using whole wheat flour at all and it still didn't look that moist!
